Follow The Directions

01

Step

Bring a small pot of water to a boil. (2 minutes)

02

Step

Cook shrimp in boiling water until they are bright pink on the outside and the meat is no longer transparent in the center. (3-5 minutes)

03

Step

Drain the shrimp immediately and rinse with cold water to stop the cooking process and cool completely.

04

Step

Slice the shrimp in half lengthwise and place them in a bowl. (5 minutes)

05

Step

In a large bowl, toss together the apple, jicama, and carrots. (3 minutes)

06

Step

In a food processor, combine the mint leaves, olive oil, sugar, vinegar, Dijon mustard, garlic, and lemongrass.

07

Step

Pulse until blended but slightly chunky. (1 minute)

08

Step

Pour the dressing over the apple mixture and toss until well mixed. (2 minutes)

09

Step

Cover the salad and shrimp separately with plastic wrap and refrigerate until ready to serve. (at least 30 minutes)

10

Step

Just before serving, gently mix the shrimp into the salad. (1 minute)

11

Step

Garnish with fresh cilantro sprigs.

For an extra layer of flavor, try grilling the shrimp before adding them to the salad.
If you don't have a food processor, you can finely mince the mint, garlic, and lemongrass and whisk them together with the other dressing ingredients.
Adjust the amount of sugar and vinegar in the dressing to suit your taste preferences.
