Follow The Directions

01

Step

Prepare the Squash: In a saucepan, place the cubed butternut squash and cover with water. Bring to a boil, then reduce heat and simmer, covered, until the squash is tender (approximately 20 minutes). Drain, but reserve the cooking liquid for later use.

02

Step

Create the Peanut Base: In a bowl, combine the peanut butter, chopped tomato, and warm water. Mix thoroughly until well combined.

03

Step

Sauté Aromatics: Heat the olive oil in a large skillet over medium-high heat. Add the sliced onion and cook for about 2 minutes, until slightly softened. Add the minced garlic, bay leaf, black pepper, and about 1/2 teaspoon of salt. Stir to combine.

04

Step

Simmer the Sauce: Pour the peanut butter mixture into the skillet with the onions and garlic. Stir well to combine, then bring the mixture to a boil. Reduce the heat to low and simmer the peanut sauce, adding the reserved butternut squash cooking liquid as needed to achieve a thick soup-like consistency (approximately 15 minutes).

05

Step

Combine and Finish: Gently stir in the cooked butternut squash. Continue to simmer for an additional 15 minutes, allowing the flavors to meld together. Stir in the lemon juice and taste to adjust the seasoning as needed.

For an authentic touch, consider mashing the peanut butter mixture by hand instead of using a food processor. This method yields a unique texture.
Feel free to adjust the amount of peanut butter to your liking. For a richer flavor, use a high-quality, natural peanut butter.
Serve this dish over medium-grained rice for a complete and satisfying meal. For a traditional accompaniment, consider serving with okra sauce (folere).
