Continue to cook until the gravy has reduced by about 1/3, stirring occasionally. This should take about 5-7 minutes. The gravy will thicken slightly as it reduces.

Remove from heat and immediately serve the redeye gravy over the pan-fried ham steaks and warm biscuits.
For a richer gravy, try using bacon fat instead of vegetable oil.
Don't skimp on the coffee! The stronger the brew, the more intense the flavor of the gravy.
If the gravy becomes too thick, add a tablespoon or two of water or coffee to thin it out.
A pinch of red pepper flakes adds a nice touch of heat.
