In a food processor, combine the heavy cream, 12 spinach leaves, the remaining crushed garlic, salt, black pepper, and cayenne pepper. Blend until completely smooth and then pour the mixture evenly over the salmon in the baking dish. (3 minutes)

Carefully arrange the remaining spinach leaves over the cream sauce, then sprinkle generously with shredded mozzarella cheese. (2 minutes)

Bake in the preheated oven until the cheese is melted, golden brown, and the salmon flakes easily with a fork. (15-20 minutes)

Let stand for 5 minutes before serving.

For an extra layer of flavor, try adding a squeeze of fresh lemon juice over the salmon before baking.
Feel free to experiment with different types of cheese, such as Parmesan or Gruyere.
If you don't have fresh spinach, frozen spinach (thawed and squeezed dry) can be used as a substitute.
