Follow The Directions

01

Step

Prepare the salad dressing by whisking together the pineapple juice, orange juice, and 1/4 cup olive oil. Season to taste with salt and pepper; set aside. (5 minutes)

02

Step

Brush the shrimp with 1 tablespoon of olive oil, and season to taste with salt and pepper; set aside. (2 minutes)

03

Step

Place the spinach leaves, mango, macadamia nuts, and banana chips into a large mixing bowl. (5 minutes)

04

Step

Heat a large skillet over medium-high heat. Heat the shrimp in the skillet on both sides until just warm in the center, about 1 minute per side. (5 minutes)

05

Step

To assemble the salads, drizzle the spinach mixture with the salad dressing, and toss until evenly combined. Divide onto four plates. (3 minutes)

06

Step

Divide the warm shrimp among the plates, and top with goat cheese. This way the goat cheese will melt down a little from the warmth of the grilled shrimp. (2 minutes)

07

Step

Sprinkle with toasted coconut flakes to serve. (1 minute)

For an extra layer of flavor, try grilling the mango slices alongside the shrimp.
If you don't have macadamia nuts, cashews or almonds make a great substitute.
To toast the coconut, spread it on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until golden brown, watching carefully to prevent burning.

I'm not a big fan of goat cheese, so I substituted feta. It was still delicious!
