For an even crispier crust, lightly toast the crushed saltine crackers in a dry skillet over medium heat for a few minutes before using.
Feel free to experiment with different seasonings in the cracker crumb mixture. Paprika, dried herbs, or lemon zest would all be delicious additions.
This recipe also works well with other white fish such as cod, snapper, or bass. Adjust cooking time accordingly based on the thickness of the fillets.
For a lower-fat option, use a light or reduced-fat salad dressing.
