In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned and no longer pink. Season with paprika, salt, and pepper. (10 minutes)

Add the jalapeño peppers, onion, garlic, celery, and green bell pepper to the pot. Cook, stirring occasionally, until the vegetables have softened and the onion is translucent. (8-10 minutes)

Stir in the chipotle peppers, diced tomatoes (with juice), tomato sauce, chili beans, dark beer, Worcestershire sauce, chili seasoning, and liquid smoke. (2 minutes)

Bring the chili to a simmer, then reduce the heat to low, cover, and cook for at least 2 hours, or up to 3 hours, stirring occasionally to prevent sticking. The longer it simmers, the more the flavors will meld and deepen. (120-180 minutes)

For a thicker chili, remove the lid during the last 30 minutes of simmering to allow some of the liquid to evaporate.
Adjust the amount of jalapeño and chipotle peppers to suit your desired level of spiciness. Remove the seeds from the jalapeños for a milder flavor.
Serve with your favorite toppings, such as shredded cheddar cheese, sour cream, chopped cilantro, and green onions. Cornbread is a classic accompaniment.
This chili can also be made in a slow cooker. Simply combine all ingredients in the slow cooker, stir well, and cook on low for 6-8 hours or on high for 3-4 hours.
