Soak the Pinto Beans: Place pinto beans into a large container and cover with several inches of cool water. Let soak for at least 8 hours, or preferably overnight. (8+ hours)

Sauté the Beef and Vegetables: Heat a large skillet over medium-high heat. Add the ground beef, frozen vegetable blend, and chopped onion. Cook, stirring occasionally, until the beef is browned and crumbly. Drain off any excess grease. (5-7 minutes)

Combine and Simmer: Transfer the cooked beef mixture and soaked pinto beans to a large pot. Stir in the chicken broth, diced tomatoes and green chiles, bacon bits, Creole seasoning, minced garlic, salt, black pepper, ground cumin, yellow mustard, and red pepper flakes. Add enough water to cover the beans and beef. (2 minutes)

Simmer to Perfection: Bring the mixture to a simmer, then reduce the heat to low, cover, and cook until the beans are tender. This may take 3 to 4 hours, or longer depending on the beans. Check the water level periodically and add more as needed to keep the beans covered. (3-4 hours)

For a richer flavor, use homemade chicken broth instead of canned.
If you don't have Creole seasoning, you can substitute with a combination of paprika, cayenne pepper, garlic powder, and onion powder.
To speed up the cooking time, you can use a pressure cooker. Follow the manufacturer's instructions for cooking beans.
Serve with cornbread, a side salad, or over rice. Top with your favorite salsa or a dollop of sour cream.
