Follow The Directions

01

Step

In a shallow dish, whisk together the olive oil, minced ginger, lemon juice, orange juice, brown sugar, and white sugar. (5 minutes)

02

Step

Add the cubed chicken to the marinade, ensuring each piece is well coated. Cover the dish and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to meld. (30 minutes to 2 hours)

03

Step

Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking. (10 minutes)

04

Step

Season the marinated chicken with sea salt. Thread the chicken and mango pieces onto the skewers, alternating between the two. Discard the remaining marinade. (10 minutes)

05

Step

Place the skewers on the preheated grill and cook for approximately 12-15 minutes, turning occasionally, until the chicken is cooked through and the mango is slightly caramelized. The internal temperature of the chicken should reach 165°F (74°C). (15 minutes)

06

Step

Remove the kabobs from the grill and let them rest for a few minutes before serving. (5 minutes)

For best results, use firm but ripe mangos that will hold their shape on the grill.
If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent them from burning.
Serve these kabobs with a side of coconut rice or a fresh green salad for a complete meal.
Adjust the amount of ginger to your preference.

Be careful not to overcook the chicken. It's best to use a meat thermometer to ensure it's perfectly done.
