In a small bowl, whisk together the flour, chili powder, onion powder, oregano, and salt. Ensure there are no lumps. (Prep time: 5 minutes)

Heat the vegetable oil in a large, heavy-bottomed saucepan over low heat. (2 minutes)

Gradually whisk the flour mixture into the hot oil, stirring constantly until a smooth paste forms. This is your roux. (5 minutes)

Slowly pour in the water, a little at a time, whisking continuously to incorporate it smoothly and prevent lumps from forming. (8 minutes)

Bring the gravy to a gentle simmer, stirring occasionally, and let it cook for 5 minutes, allowing the flavors to meld and the gravy to thicken. (5 minutes)

Remove from heat and let cool for 10 minutes before serving. The gravy will thicken further as it cools. (10 minutes)

For a smokier flavor, add 1/2 teaspoon of smoked paprika along with the chili powder.
If you prefer a spicier gravy, add a pinch of cayenne pepper or a few dashes of your favorite hot sauce.
To make a vegetarian version, use vegetable broth instead of water for added depth of flavor.
This gravy can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat, adding a little water if needed to thin it out.
