Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the chopped onion, green bell pepper, and minced garlic. Cook, stirring occasionally, until the vegetables are softened and lightly browned, about 5 minutes.

Add the ground pork to the pot, breaking it up with a spoon. Season with Creole seasoning and salt. Cook until the pork is browned, about 5-7 minutes, making sure to crumble it well. There's no need to drain any excess fat; it will add flavor to the dish.

Arrange the chopped cabbage evenly over the browned pork. Pour the diced tomatoes with green chilies over the cabbage. Do not stir.

Cover the pot with a tight-fitting lid and reduce the heat to medium-low. Allow the cabbage to cook, undisturbed, until it is wilted and tender, about 15-20 minutes. The steam will help to cook the cabbage evenly.

After 15-20 minutes, remove the lid and gently stir the cabbage to combine it with the pork and tomatoes. Taste and adjust seasoning as needed. If the cabbage is not as tender as you like, continue to cook, uncovered, for another 5-10 minutes, or until desired tenderness is reached.

For a vegetarian version, omit the pork and use a vegetable broth or bouillon cube dissolved in water for added flavor.
Feel free to add other vegetables like carrots or celery for extra depth of flavor.
If you prefer a spicier dish, add a pinch of cayenne pepper or a dash of hot sauce.
Smothered Cabbage is even better the next day, as the flavors have had time to meld together. Store leftovers in an airtight container in the refrigerator for up to 3 days.
Serve alongside cornbread, black-eyed peas, or your favorite Southern sides.
