Follow The Directions

Step

Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray. (5 minutes)

In a microwave-safe bowl, melt butter in the microwave in 15-second intervals until just melted. Allow to cool slightly, then whisk in grapeseed oil. (2 minutes)

Place salmon fillets skin-side down on the prepared baking sheet. Brush generously with the butter mixture and sprinkle evenly with 1 1/2 teaspoons of Greek seasoning. (5 minutes)

In a small bowl, combine crushed pistachios, panko bread crumbs, and the remaining 1 teaspoon of Greek seasoning. Gently press the pistachio mixture evenly over the top of each salmon fillet. (5 minutes)

Bake in the preheated oven until the salmon is cooked through and flakes easily with a fork, approximately 18-22 minutes. (20 minutes)

For a richer flavor, try using brown butter instead of melted butter. Simply cook the butter in a saucepan over medium heat until the milk solids turn brown and the butter has a nutty aroma. Allow to cool slightly before using.
Feel free to experiment with different nuts! Almonds, walnuts, or pecans would all be delicious substitutes for pistachios.
To prevent the salmon from sticking to the foil, you can also use parchment paper instead.
If you want a crispier crust, broil the salmon for the last 1-2 minutes of cooking time, keeping a close eye on it to prevent burning.
