For a more intense pistachio flavor, add 1/4 teaspoon of pistachio extract to the dough along with the vanilla extract. If you don't have instant pistachio pudding mix, you can use a different flavor or omit it altogether, but the pistachio flavor and light green color will be affected. The cookies can be stored in an airtight container at room temperature for up to 3 days.
