In a mixing bowl, whisk together 1/3 cup of the reserved pineapple juice, rice wine vinegar, soy sauce, 1 teaspoon olive oil, vanilla vodka, ground ginger, brown sugar, and white sugar until well blended. Adjust the sugar to taste according to your preference. (5 minutes)

Place the beef sirloin steak strips in a large, resealable plastic bag. Pour the pineapple juice mixture over the steak, seal the bag, and gently turn to ensure the steak is evenly coated with the marinade. Refrigerate for at least 3 to 4 hours, or preferably overnight, to allow the flavors to fully infuse into the meat. (5 minutes)

In a saucepan, bring 1.5 cups of water to a boil over medium-high heat. Add the long-grain white rice, stir, then reduce the heat to low, cover the saucepan, and simmer for 20 minutes, or until the rice is cooked through and the water is absorbed. Fluff with a fork before serving. (25 minutes)

Heat 2 tablespoons of olive oil in a large skillet or wok over medium heat. Remove the steak strips from the marinade (discard the marinade) and place them in the hot skillet. Cook and stir the steak strips until they are nicely browned and no longer pink, about 2 minutes per side. Remove from the heat, cover to keep warm, and set aside. (10 minutes)

In a separate skillet, place the pineapple chunks and cook over medium heat until they are slightly softened and heated through, approximately 4 minutes. Be careful not to overcook them; you want them to retain their shape and some firmness. (4 minutes)

To serve, divide the cooked rice between two bowls. Top with the browned steak strips and the warmed pineapple chunks. Toss briefly to combine the flavors and enjoy immediately.

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the marinade for a subtle kick.
Serve with a sprinkle of sesame seeds and chopped green onions for added visual appeal and flavor.
If you don't have vanilla vodka, you can substitute with regular vodka and a drop of vanilla extract.
