Carefully roll each pastry sheet into a tight log, ensuring the seam is facing down. Use a sharp knife to cut each log into 6 equal-sized pinwheels. Place the cinnamon rolls, cut-side up, in the prepared baking pan, leaving a little space between each roll. (10 minutes)

While the cinnamon rolls are baking, prepare the glaze. In a clean bowl, combine the remaining mascarpone cheese, pistachio cream, heavy cream, and the remaining 1/8 teaspoon salt. Beat with an electric mixer until smooth. Gradually add the sifted powdered sugar, beating until the glaze is smooth, light, and slightly fluffy. (10 minutes)

Once the cinnamon rolls are out of the oven and slightly cooled, generously spread the pistachio mascarpone frosting over the warm rolls. Sprinkle with additional chopped pistachios for garnish, if desired. Serve warm and enjoy! (5 minutes)

For best results, ensure the puff pastry is thoroughly thawed but still cold to the touch before using.
If pistachio cream is unavailable, you can make your own by blending pistachios with a little heavy cream and sugar until smooth.
