For the most aromatic rosemary, grind dried rosemary leaves just before using. A molcajete, mortar and pestle, or a clean coffee grinder works beautifully. Adjust the amount of cayenne pepper to your preferred level of heat. For a milder rub, omit the cayenne altogether. For optimal flavor, generously apply the rib rub to the ribs at least 2 hours before cooking, or preferably overnight, allowing the spices to penetrate the meat.
