Preheat the oven to 450°F (230°C). Line a baking sheet with foil. Spread the onions, carrots, and celery on the prepared baking sheet. Place the rib bones on top. (Prep time: 5 minutes)

Roast until the bones are deep brown and the onions are blackened, about 1 hour. Use a spatula or tongs to transfer the bones and vegetables into a saucepan. Drain off and reserve any rendered fat from the baking sheet for the gravy. (Roasting time: 1 hour)

Add the broth and water to the saucepan, and bring to a boil on high heat. Reduce heat to low and simmer until the meat falls off the bone and is flavorless, about 4 hours. Skim any fat from the surface and reserve. (Simmering time: 4 hours)

Strain the broth and let cool to room temperature. (Cooling time: 30 minutes)

Melt the butter in a pot over medium-high heat and sauté the mushrooms until well browned. Add 2 tablespoons of rendered beef fat and stir until melted. Add the flour and cook for a few minutes, stirring constantly. (Sautéing time: 15 minutes)

Whisk in the broth, and bring to a simmer. Cook, stirring occasionally, about 5 minutes. Reduce heat to medium and simmer until the gravy has thickened to the desired consistency, 5 to 10 minutes more. (Simmering time: 10-15 minutes)

Adjust salt to taste and season with freshly ground black pepper, cayenne, and balsamic vinegar. (Seasoning time: 5 minutes)

For an even richer flavor, use homemade beef bone broth.
If you don't have reserved beef fat, you can use additional butter or olive oil.
