For an extra touch of flavor, add a sprig of fresh rosemary or thyme to the baking dish while the chicken is cooking. If you don't have fresh cranberries, you can use frozen cranberries. No need to thaw them first. To make ahead, the chicken breasts can be stuffed and wrapped with prosciutto up to 24 hours in advance. Store in the refrigerator until ready to bake. Add 10-15 minutes to the cooking time if baking from cold. The orange-cranberry jus can also be made ahead of time and reheated gently before serving.
