Prepare the Foil and Cakes: Spray the aluminum sheets with cooking spray. Place a sponge cake shell in the center of each sheet. (5 minutes)

Add Pineapple and Toppings: Spoon the drained crushed pineapple into the cakes, dividing it equally. Sprinkle each cake with about 1 teaspoon of brown sugar and about 2 teaspoons of chopped pecans. Top each cake with 3 maraschino cherries, and drizzle 1 to 2 teaspoons of the reserved pineapple juice over each cake. (10 minutes)

Wrap and Cook: Wrap the cakes securely in the foil, leaving some room at the top for air circulation to allow steam to escape. (5 minutes)

Campfire Cooking: Place the foil packs onto the embers of a campfire. Cook until the cakes are hot and bubbling, approximately 10-12 minutes, depending on the heat of the embers. Be careful not to place directly in flames. (10-12 minutes)

Serve: Carefully remove the foil packs from the embers. Let cool slightly before opening and enjoying. (5 minutes)

Ensure the foil is tightly sealed to prevent leaks, but leave a small vent for steam to escape.
For a richer flavor, consider adding a small pat of butter to each cake before wrapping in foil.
Cooking times may vary depending on the heat of the campfire; check frequently to avoid burning.
These can also be baked in a preheated oven at 350°F (175°C) for approximately 15-20 minutes.
