For a richer flavor, try using a combination of smoked Gouda and Gruyere cheese. If you don't have half-and-half, whole milk can be substituted, but the sauce will be slightly less creamy. Add a pinch of cayenne pepper to the cheese sauce for a touch of heat. Broiling the asparagus for the last minute or two will give it a nice char. The cheese sauce can be made ahead of time and gently reheated over low heat before serving.
