Heat a saucepan over medium heat and spray with cooking spray. Sauté the chopped mushrooms until tender and lightly browned, about 5-7 minutes. Remove from the pan and set aside.

Heat a large skillet over medium-high heat and spray with cooking spray. Pour the cottage cheese mixture into the hot skillet to form a pancake. Cook until bubbles begin to form on the surface and the edges look set. (3-5 minutes)

Carefully flip the pancake and cook until browned on the other side, about 2-3 minutes. Remove from heat.

Spread the sautéed mushrooms over one half of the pancake. Top with fresh spinach, diced Canadian bacon, and crumbled feta cheese.

Fold the other half of the pancake over the fillings, creating a savory, filled pancake. Serve immediately.

For a vegetarian option, omit the Canadian bacon and add more vegetables, such as bell peppers or zucchini.
Feel free to experiment with different types of cheese, such as mozzarella or Gruyère.
A dash of hot sauce can add an extra kick to these savory pancakes.
