For a spicier kick, add a pinch of cayenne pepper to the halibut seasoning or use a hot enchilada sauce.
Feel free to substitute other types of white fish, such as cod or sea bass, for the halibut.
If you don't have green bell pepper, red or yellow bell pepper also works well.
To prevent tortillas from tearing, warm them slightly before filling.
