Carefully scoop out the eggplant flesh, leaving about a 1/4-inch border. Dice the scooped-out eggplant. In a bowl, combine the diced eggplant, prepared stuffing, Parmesan cheese, mayonnaise, and beaten egg. Mix well. (10 minutes)

Fill each eggplant shell generously with the stuffing mixture. Sprinkle paprika over the tops. (5 minutes)

Bake in the preheated oven until the filling is cooked through and golden brown on top, approximately 30 to 35 minutes. (35 minutes)

For a richer flavor, sauté the diced eggplant with a clove of minced garlic and a tablespoon of olive oil before mixing it with the stuffing.
Feel free to experiment with different types of cheese! Gruyere, mozzarella, or even a little goat cheese would be delicious.
If you're short on time, you can use pre-made stuffing.
Garnish with fresh parsley or basil for added visual appeal and freshness.
