Follow The Directions

01

Step

Prepare the Chicken: Place chicken breasts between two sheets of plastic wrap. Using a meat mallet, pound to an even 1/4-inch thickness. Season generously with salt and pepper. (5 minutes)

02

Step

Set Up Breading Station: Place flour in a shallow dish. In another dish, whisk the eggs. Place panko bread crumbs in a third dish. (5 minutes)

03

Step

Bread the Chicken: Dredge each chicken piece in flour, shaking off excess. Dip in beaten egg, then coat thoroughly with panko bread crumbs, pressing gently to adhere. (10 minutes)

04

Step

Preheat Oven: Preheat oven to 200 degrees F (95 degrees C) to keep schnitzel warm. (2 minutes)

05

Step

Fry the Schnitzel: Heat vegetable oil in a large skillet over medium heat. Carefully place breaded chicken in the hot oil, being careful not to overcrowd the pan. Cook for 3-4 minutes per side, or until golden brown and cooked through. (15 minutes)

06

Step

Drain and Keep Warm: Transfer cooked schnitzel to a paper towel-lined plate, then place in the preheated oven to keep warm while you prepare the sandwiches. (2 minutes)

07

Step

Assemble the Sandwiches: Spread mayonnaise on the bottom half of each roll. Top with a piece of schnitzel, a squeeze of lemon juice, a dash of hot sauce, and chopped lettuce. Spread Dijon mustard on the top half of each roll. Close sandwiches and serve immediately. (5 minutes)

For an extra crispy schnitzel, double-bread the chicken. After the first coating of bread crumbs, dip back into the egg and then back into the bread crumbs.
Adjust the amount of lemon juice and hot sauce to your preference.
Serve immediately for the best texture. Schnitzel is best enjoyed fresh.

I added a sprinkle of paprika to the breadcrumbs for extra color and a hint of smokiness. Delicious!

I found that pounding the chicken really thin is key to getting it perfectly cooked and crispy.

My family loved this! It's a great way to use leftover chicken, too.
