Add butter to the same skillet and melt over medium heat. Add sliced onion, mushrooms, and sugar. Cook and stir for 1 minute, then cover the skillet, reduce heat to medium-low, and simmer until onions are softened, about 10 minutes.

Uncover the skillet and stir the mixture, scraping up any browned bits from the bottom. Continue cooking until the onions are lightly caramelized, about 3 minutes more.

Pour bourbon into the onion mixture and cook until the alcohol has mostly evaporated, about 3-4 minutes. Add beef broth and heavy cream; bring to a simmer. Cook for 10 minutes, stirring occasionally, until the sauce has thickened slightly.

Return the browned pork chops to the skillet, nestling them into the sauce. Cover the skillet tightly with aluminum foil.

Bake in the preheated oven until an instant-read thermometer inserted into the thickest part of the pork reads 145 degrees F (63 degrees C), about 25-30 minutes. Let rest for 5 minutes before serving.

For an even richer flavor, consider using bone-in pork chops.
If you don't have an oven-safe skillet, transfer the pork chops and sauce to a 9x13-inch baking dish before baking.
Serve with mashed potatoes, roasted vegetables, or a simple green salad.
