Follow The Directions

01

Step

Prepare the Marinade: Reserve 4 tarragon sprigs for garnish. Strip the leaves from the remaining tarragon sprigs. In a blender, combine the tarragon leaves, Greek yogurt, harissa sauce, vinegar or citrus juice, garlic, cumin, and salt. Blend until completely smooth, pausing to scrape down the sides as needed. (5 minutes)

02

Step

Marinate the Chicken: Place the chicken breasts in a shallow dish. Pour the tarragon yogurt marinade over the chicken, ensuring both sides are thoroughly coated. Cover the dish tightly and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to fully penetrate the chicken. (2 hours - overnight)

03

Step

Prepare the Grill: Preheat an outdoor grill to medium-high heat (about 375-450°F or 190-230°C). Lightly oil the grill grate to prevent the chicken from sticking. (5 minutes)

04

Step

Grill the Chicken: Remove the chicken breasts from the marinade, allowing any excess to drip off. Discard the remaining marinade. Place the chicken breasts on the preheated grill. Cook for approximately 7 minutes per side, or until dark grill marks appear and the internal temperature reaches 165°F (74°C). Use an instant-read thermometer inserted into the thickest part of the breast to ensure it is fully cooked. (14 minutes)

05

Step

Garnish and Serve: Transfer the grilled chicken breasts to a serving platter. Garnish with a drizzle of extra harissa sauce, if desired, and the reserved fresh tarragon sprigs. Serve immediately and enjoy! (2 minutes)

For an even more intense flavor, marinate the chicken overnight.
If you don't have a grill, you can bake the chicken in a preheated oven at 400°F (200°C) for about 20-25 minutes, or until cooked through.
Adjust the amount of harissa sauce to your preference for spiciness.
Serve with a side of grilled vegetables or a fresh salad for a complete meal.

Be careful not to overcook the chicken; it can dry out easily.

I used lemon juice instead of vinegar, and it was equally delicious.

Next time, I'll try adding a bit of honey to the marinade for sweetness.
