In a saucepan, heat milk and cream over medium heat until simmering (approximately 5 minutes). Gradually whisk in Parmesan and Romano cheeses. Remove from heat.

In a heat-proof bowl, whisk egg yolks; slowly whisk in about ¼ cup of the hot cream mixture to temper the eggs. Gradually whisk the egg yolk mixture into the cream mixture in the saucepan; season with salt and black pepper. Allow the Alfredo sauce to cool, then refrigerate until needed.

In a large glass or ceramic bowl, whisk together salad dressing, rosemary, and lemon juice. Add steak and toss to coat evenly. Cover the bowl with plastic wrap and marinate in the refrigerator for 4 hours.

Preheat an outdoor grill for medium heat and lightly oil the grate.

Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite (approximately 8 minutes). Drain.

In a saucepan, heat 2 cups of the refrigerated Alfredo sauce over medium heat. Add spinach and 2 tablespoons of Gorgonzola cheese.

Remove steak from the marinade; shake off any excess. Discard the remaining marinade. Cook on the preheated grill to the desired doneness (5 to 10 minutes).

Pour the hot Alfredo sauce into a large serving bowl. Add fettuccine and toss to combine. Sprinkle the remaining 2 tablespoons of Gorgonzola cheese on top. Add the grilled steak; drizzle with balsamic glaze and garnish with parsley.

For a richer sauce, use whole milk instead of 2%.
Ensure the grill is well-oiled to prevent the steak from sticking.
Adjust the grilling time based on the desired doneness of the steak.
Freshly grated Parmesan and Romano cheese will provide the best flavor.
Garnish generously with fresh parsley for a vibrant touch.
