Toast the Almonds: In a heavy-bottomed pan over medium heat, combine sliced almonds and 3 tablespoons of sugar. Stir constantly until the sugar melts and evenly coats the almonds, creating a beautiful caramelized crust. This should take approximately 15-20 minutes. Remove from heat and set aside to cool.

Prepare the Vinaigrette: In a mixing bowl, whisk together vegetable oil, apple cider vinegar, 2 1/2 tablespoons of sugar, salt, pepper, and a dash of hot sauce (if using). Whisk until well combined and emulsified.

Assemble the Salad: In a large mixing bowl, gently toss together spring mix, drained mandarin oranges, sliced fresh strawberries, chopped celery, chopped red onion, and fresh parsley.

Dress and Serve: Drizzle the prepared vinaigrette over the salad mixture, ensuring each ingredient is lightly coated. Gently toss to combine. Sprinkle the toasted caramelized almonds over the salad just before serving to retain their delightful crunch.

For enhanced flavor, toast the almonds a day in advance and store them in an airtight container.
If you don't have apple cider vinegar, white wine vinegar can be used as a substitute.
Feel free to add other fruits like blueberries or blackberries for extra bursts of flavor and color.
