Follow The Directions

In a large skillet or Dutch oven over medium heat, melt butter with olive oil. (2 minutes)

Add garlic powder and sliced mushrooms. Sauté until mushrooms are tender and lightly browned. (3-5 minutes)

Add the thawed crawfish tails and chopped green onions to the skillet. Reduce heat to low and cook, stirring occasionally, until crawfish is heated through. (5 minutes)

Stir in the grated Parmesan cheese, minced parsley, and half-and-half. Simmer gently, stirring occasionally, until the sauce has thickened slightly. (5 minutes)

Stir in the crushed red pepper flakes and Creole seasoning. Season with salt and freshly ground black pepper to taste. (1 minute)

Serve hot over cooked rice. Garnish with additional parsley if desired.

For a richer flavor, consider using a seafood stock or fumet in place of some of the half-and-half.
Adjust the amount of crushed red pepper to your desired level of spiciness.
Fresh crawfish can be substituted for frozen, if available.
A dash of hot sauce adds a little extra kick.
If you don't have Creole seasoning, you can make your own blend using paprika, cayenne pepper, garlic powder, onion powder, dried oregano, dried thyme, and black pepper.
