For a deeper flavor, try using a variety of apples, such as Honeycrisp or Fuji, in addition to Gala.
If you don't have hot honey, you can substitute regular honey with a pinch of red pepper flakes.
These tarts are best served immediately while the pastry is still warm and crisp.
