Follow The Directions

01

Step

Preheat the oven to 400 degrees F (200 degrees C). Grease a 9- or 10-inch pie dish with 1 tablespoon olive oil, and set aside. (5 minutes)

02

Step

In a mixing bowl, combine ricotta, egg, flour, baking powder, salt, black pepper, garlic, basil, oregano, and Parmigiano-Reggiano cheese. Stir thoroughly to combine. (5 minutes)

03

Step

Spoon the mixture into the prepared pie dish, and spread into an even layer. (2 minutes)

04

Step

Bake in the preheated oven until the torta puffs up a bit, and the cheese firms up, about 20 minutes. A skewer inserted in the center should come out clean. (20 minutes)

05

Step

Let cool until just warm. Cover the top of the torta with halved cherry tomatoes. Drizzle with remaining olive oil, and season generously with sea salt. (5 minutes)

For a richer flavor, use whole milk ricotta cheese.
Feel free to experiment with different herbs, such as thyme or chives.
A drizzle of balsamic glaze adds a touch of sweetness and acidity.
Serve with a simple green salad for a complete meal.
