While the cake is baking, dissolve the gelatin mix in boiling water in a heat-proof bowl. Stir in 1/4 cup Key lime juice. (5 minutes)

Once the cake is out of the oven, use a fork or wooden skewer to poke holes all over the cake. Slowly spoon the gelatin-Key lime mixture evenly over the cake, allowing it to soak into the holes. Refrigerate until completely cool, at least 2 hours. (10 minutes + 2 hours refrigeration)

In a large bowl, combine sweetened condensed milk, heavy cream, and 1/2 cup Key lime juice. Add green food coloring, if desired, for a vibrant hue. Beat with an electric mixer until smooth and well combined. (5 minutes)

Once the cake is completely cool, spread the Key lime topping evenly over the cake. Refrigerate for at least 30 minutes before serving to allow the topping to set. (5 minutes + 30 minutes refrigeration)

For a more intense lime flavor, add the zest of one lime to the cake batter and/or the topping.
If you don't have Key lime juice, regular lime juice can be used, but the flavor will be slightly different.
To prevent the cake from sticking, you can also line the baking pan with parchment paper.
Garnish with whipped cream and lime slices for an elegant presentation.
