Preheat the oven to 375 degrees F (190 degrees C).

Heat olive oil in a skillet over medium-high heat. Add diced onion and a large pinch of salt; sauté until translucent, about 3 to 5 minutes. Add diced poblano peppers and red bell pepper; season with cumin, black pepper, and oregano. Cook and stir until peppers start to soften, about 2 minutes. Add chipotle peppers and adobo sauce; stir to combine. Remove from heat.

Stir diced cooked turkey and ½ of the shredded Cheddar cheese into the pepper mixture. Add red enchilada sauce, chicken broth, and the remaining salt; stir well, then transfer the mixture to a 9x12-inch baking dish. Place the dish on a baking sheet.

In a large bowl, whisk together cornmeal, self-rising flour, white sugar, and 1 teaspoon kosher salt. Whisk in milk and eggs until a thin batter forms; spoon the batter evenly over the turkey filling. Scatter the remaining ½ of the shredded Cheddar cheese on top.

Bake in the preheated oven until the topping is golden brown and a toothpick inserted into the center comes out clean, approximately 45 to 60 minutes.

For an extra layer of flavor, consider adding a can of drained and rinsed black beans to the turkey filling.
If you don't have self-rising flour, you can substitute it with all-purpose flour and ½ teaspoon of baking powder.
Garnish with a dollop of sour cream, fresh cilantro, or a drizzle of hot sauce for an added kick.
