For a sweeter caviar, add 1/4 cup of finely diced mango or pineapple.
If you prefer a milder flavor, remove the seeds and membranes from the jalapeños before dicing.
This caviar can be made a day ahead; the flavors will continue to develop.
To prevent the tomatoes from making the caviar soggy, you can seed them before dicing.
