For a spicier kick, leave some of the jalapeno seeds in. Adjust the amount of sugar and lime juice to your preference. If you can't find vegetarian fish sauce, you can use tamari or soy sauce. Start with a smaller amount and adjust to taste. Feel free to add other vegetables like bean sprouts, bell peppers, or shredded lettuce. For added protein, grilled tofu, shrimp, or chicken would be delicious additions. The salad can be made ahead of time, but wait to add the peanuts until just before serving to prevent them from becoming soggy.
