For a richer flavor, use apple cider instead of apple juice. A splash of bourbon or rum added to the glaze would add an exciting twist. If you don't have allspice, a pinch of nutmeg or cloves will work well as a substitute. To prevent the apples from browning while you prepare the yams, toss them with a tablespoon of lemon juice.
