Follow The Directions

01

Step

In a saucepan over high heat, bring the jasmine rice and water to a boil. (2 minutes)

02

Step

Reduce heat to medium-low, cover, and simmer until the rice is tender and the water is absorbed. (20-25 minutes)

03

Step

While the rice is cooking, heat the ghee in a small skillet over medium heat. (1 minute)

04

Step

Add the broken chile pepper to the ghee and cook until fragrant. (30 seconds)

05

Step

Stir in the black mustard seeds and cook until they begin to pop. (30 seconds)

06

Step

Remove the skillet from the heat and stir in the turmeric, curry leaves, and asafoetida powder.

07

Step

In a large bowl, whisk together the milk and yogurt until smooth.

08

Step

Stir in the spiced ghee mixture into the yogurt mixture.

09

Step

Gently fold in the cooked rice until well combined.

10

Step

Season to taste with salt.

11

Step

Allow the Yogurt Rice to cool to room temperature before serving.

For a richer flavor, use full-fat yogurt.
If you cannot find curry leaves, you can omit them, but they add a unique aroma and taste.
Adjust the amount of chile pepper to your preference for heat.
This dish is best served at room temperature or slightly chilled.
