Step

Season the chicken breasts on both sides with salt, black pepper, and cayenne pepper. Set aside. (5 minutes)

In a skillet over medium heat, melt 3 tablespoons of butter. Add the sage leaves and fry until crisp. Remove and reserve for garnish. (2 minutes)

Add the seasoned chicken breasts to the same skillet. Cook until fully cooked, approximately 4 minutes per side. Remove the chicken to a plate and cover loosely with foil to keep warm. (8 minutes)

Add minced shallots or onion to the skillet and sauté for 1 minute until softened. Pour in the apple cider and apple cider vinegar, then bring to a simmer over medium-high heat. Cook until the liquid is reduced by half, roughly 5 minutes. Reduce heat to low.

Return the chicken breasts to the skillet, along with any accumulated juices from the plate. Cook for a few minutes, turning occasionally, and basting with the hot sauce until the chicken is heated through. An instant-read thermometer inserted into the center should read 165°F (74°C). Remove the chicken to a serving plate. (5 minutes)

Add the remaining 1 tablespoon of butter to the pan and turn off the heat. Swirl the pan until the butter emulsifies into the sauce, creating a glossy finish. Taste the sauce for seasoning and adjust as needed. (1 minute)

Spoon the pan sauce over the chicken and garnish with the fried sage leaves. Serve immediately. (1 minute)

For an extra layer of flavor, consider marinating the chicken in a little apple cider vinegar and Dijon mustard for at least 30 minutes before cooking.
If you don't have fresh sage leaves, you can use 1/2 teaspoon of dried sage instead. Add it to the pan with the shallots.
Serve with roasted vegetables or a side of creamy mashed potatoes to complete the meal.
