Follow The Directions

01

Step

In a large pot, combine the celery root chunks, half of the lemon juice, and a generous pinch of kosher salt. Cover with cold water. (2 minutes)

02

Step

Bring to a boil over high heat, then reduce heat to medium-low and simmer gently until the celery root is very tender and easily pierced with a fork, about 15-20 minutes.

03

Step

Drain the celery root thoroughly in a colander. (1 minute)

04

Step

Transfer the drained celery root to a high-speed blender. Add the cream and butter. Blend until completely smooth and creamy. (2-3 minutes)

05

Step

For an extra-silky texture, pass the puree through a fine-mesh sieve into a clean bowl, using a wooden spoon or spatula to help it along. This step is optional but highly recommended. (5-7 minutes)

06

Step

Stir in the remaining lemon juice and season with salt and cayenne pepper to taste. Adjust the seasoning as needed. (1 minute)

07

Step

Serve immediately and enjoy!

For an even richer flavor, consider roasting the celery root chunks before boiling. Toss them with olive oil, salt, and pepper, and roast at 400°F (200°C) for about 30 minutes, or until tender and slightly caramelized. This will intensify the natural sweetness of the celery root.
A touch of nutmeg or a sprig of fresh thyme added during the simmering process can also enhance the flavor profile of the puree.
The puree can be made ahead of time and reheated gently over low heat, stirring frequently, or in the microwave in short intervals. Add a splash of cream or milk if needed to loosen the consistency.
