For extra crispy nuggets, double dip the chicken: Dip the chicken pieces in the batter, then back into the flour, and then back into the batter before frying. Make sure the oil is hot enough to ensure crispy nuggets. Don't overcrowd the fryer, fry the nuggets in batches. To keep the nuggets warm while frying the remaining batches, place the cooked nuggets on a wire rack in a preheated oven (200°F or 95°C).
