Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper. (5 minutes)

In a large bowl, combine sugar, eggs, and vanilla extract. Beat with an electric mixer until frothy. Add flour and baking powder and mix well. Fold in chocolate pieces until a sticky dough forms. Divide the dough into 2 equal portions and shape each into a long, thick log. Place logs 2 inches apart on the prepared baking sheet. (15 minutes)

Bake logs in the preheated oven until golden brown, approximately 15 to 20 minutes.

Remove logs from the oven and let them cool until they are easily handled, about 5 minutes. Transfer to a cutting board and slice the logs diagonally into 3/4-inch slices using a serrated knife. (10 minutes)

Return cantucci slices to the baking sheet and place them back in the oven. Turn off the oven and allow the cantucci to dry in the warm oven for 30 minutes. Cool to room temperature, about 10 minutes, before serving. (40 minutes)

For a richer flavor, use high-quality dark chocolate with a cocoa content of 70% or higher.
Feel free to add a handful of chopped almonds or hazelnuts for extra crunch and flavor.
Store the cooled cantucci in an airtight container at room temperature for up to a week.
These cantucci are excellent for dipping in coffee, tea, or dessert wine.
