Follow The Directions

01

Step
5 mins

Melt the butter in a skillet over medium-low heat. Add the chopped onion and parsley and cook until softened and fragrant, about 5 minutes.

02

Step
2 mins

Preheat your oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch casserole dish with butter.

03

Step
8 mins

Arrange a layer of tomato slices in the prepared casserole dish, overlapping slightly. Season lightly with salt. Distribute half of the cooked onion mixture evenly over the tomatoes, followed by half of the grated Parmesan cheese. Repeat with another layer of tomatoes, salt, onion mixture, and Parmesan.

04

Step
3 mins

In a separate bowl, whisk together the sour cream, eggs, and a pinch of salt until smooth. Pour this mixture evenly over the layered tomatoes.

05

Step
2 mins

Sprinkle the remaining Parmesan cheese over the top.

06

Step
30 mins

Bake in the preheated oven until the casserole is set, lightly browned, and bubbly around the edges, approximately 30 minutes.

For added depth of flavor, consider adding a clove of minced garlic to the onion and parsley mixture while cooking.
Fresh basil leaves, torn and scattered over the casserole after baking, will add a bright, aromatic finish.
If you don't have sour cream, plain Greek yogurt can be substituted for a tangier flavor.
Feel free to experiment with different cheeses. Gruyere, mozzarella, or provolone would all be delicious additions or substitutions for the Parmesan.
To prevent the top from browning too quickly, you can tent the casserole with aluminum foil during the last 10-15 minutes of baking.
