Pre-shredded cheese doesn't melt as smoothly and can result in a grainy sauce. Don't overcook the pasta! Al dente pasta will hold its shape better and provide a more pleasant texture. If the sauce becomes too thick, add a little more pasta water to thin it out. If it's too thin, simmer for a minute or two, stirring constantly, until it thickens.
