For a richer flavor, try using browned butter instead of softened butter. If you don't have oat bran, you can substitute it with an equal amount of rolled oats, finely ground in a food processor. The buttermilk adds a lovely tang to the bread; if you don't have buttermilk, you can make a substitute by adding 1 1/2 tablespoons of lemon juice or white vinegar to 1 1/8 cups of milk. A little lemon or orange zest will add depth.
