For a richer flavor, use homemade chicken broth. Add other vegetables like carrots, snow peas or mushrooms to customize your pancit. If you can't find fresh bok choy, you can use napa cabbage or other leafy greens as a substitute. Adjust the amount of crushed red pepper flakes to your desired level of spiciness.
