In a large, heavy-bottomed pot or Dutch oven (preferably cast iron), render the bacon over medium-high heat until browned but not crisp (about 5 minutes).

Add the sliced cabbage and water (or broth) to the pot, ensuring the cabbage is somewhat submerged. Cover and let steam for about 1 minute.

Season with cayenne pepper and salt. Bring to a boil, then reduce heat to a simmer. Cover and cook for 15 minutes, allowing the cabbage to soften.

Remove the lid and increase heat to medium-high. Continue to cook, stirring frequently, until all liquid has evaporated and the cabbage begins to brown and caramelize on the bottom of the pot (about 10 minutes). Be sure to scrape the bottom of the pot regularly to prevent sticking and encourage even browning.

For a richer flavor, substitute chicken broth for the water.
Adjust the amount of cayenne pepper to your preference for spice.
If you don't have sugar substitute, a pinch of sugar will also do the trick to balance the flavors.
This dish is best served immediately, but leftovers can be stored in the refrigerator for up to 3 days.
