Step

In a cold skillet, add the pancetta. Cook over medium heat, tossing occasionally, until the pancetta begins to crisp, approximately 4-5 minutes.

Remove the stems and, if desired, the seeds from the Calabrian chili peppers. Reserve 2-3 tablespoons of the chili oil.

Slightly separate the salami slices and place them in a food processor. Add the crisped pancetta, chili oil, and Calabrian peppers. Pulse intermittently until the mixture is finely ground. Add the olive oil and softened butter. Process until the spread reaches your desired smoothness.

Transfer the spread to a bowl. Cover tightly with plastic wrap, pressing it directly onto the surface, and refrigerate for at least 8 hours, or preferably overnight, to allow the flavors to meld and deepen.

For a milder spread, reduce the amount of Calabrian chili peppers.
If the spread is too thick, add a little more olive oil until you reach the desired consistency.
Serve this spread with toasted baguette slices, crackers, or even as a flavorful addition to sandwiches.
