Create a water bath by placing the covered baking dish inside a larger 9x13 inch casserole dish. Carefully pour hot water into the larger dish until it reaches about 1/3 of the way up the sides of the smaller dish. (3 minutes)

For an enhanced flavor, consider using fresh corn kernels when in season. Simply blanch the corn for a few minutes before using.
If you prefer a richer pudding, substitute milk or half-and-half for the water.
To prevent the top from browning too much, check the pudding halfway through baking. If it's browning rapidly, reduce the oven temperature by 25 degrees F.
