Follow The Directions

01

Step

In a small bowl, whisk together the white sugar, soy sauce, white wine, and 1/2 cup chicken broth. Set aside. (5 minutes)

02

Step

Pat the tofu dry with paper towels, then cut into 1-inch cubes. Season with salt and pepper. Sprinkle with 1 tablespoon of cornstarch, ensuring all sides are coated. (10 minutes)

03

Step

Heat vegetable oil in a large, deep skillet or deep-fryer to 375°F (190°C). Carefully add the tofu cubes and fry until golden brown and crispy on all sides, turning occasionally. Remove with a slotted spoon and drain on paper towels. (10-15 minutes)

04

Step

In a separate large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chopped onion and green beans. Stir-fry for 3-5 minutes until the green beans are slightly tender. Season with salt and pepper. (8 minutes)

05

Step

Add the sliced tomatoes to the skillet and cook until they begin to soften and break down, about 4 minutes. Stir in the sliced bamboo shoots. (5 minutes)

06

Step

Pour the sauce mixture into the skillet with the vegetables. Bring to a boil, then reduce heat and simmer for 5 minutes, stirring occasionally. If the sauce becomes too thick, add chicken broth as needed. (8 minutes)

07

Step

In a small bowl, whisk together the remaining 2 tablespoons of cornstarch with 3 tablespoons of water until smooth. Pour this slurry into the sauce in the skillet. Simmer, stirring gently, until the sauce thickens and becomes clear. (5 minutes)

08

Step

Gently fold in the fried tofu, ensuring it is well coated with the sauce. Simmer for another 2-3 minutes to allow the flavors to meld together. Serve hot over white rice. (5 minutes)

For extra crispy tofu, press it firmly for at least 30 minutes to remove excess water before frying.
Adjust the amount of sugar and soy sauce to your liking. Taste and adjust the seasoning as needed.
If you don't have dry white wine, you can substitute it with rice wine vinegar or more chicken broth.
Garnish with sesame seeds and chopped green onions for added flavor and visual appeal.
