Preheat an outdoor grill for medium heat and lightly oil the grate. (5 minutes)

Grill corn, turning occasionally, until kernels are slightly charred. (15-20 minutes). Let cool until safe to handle. (at least 15 minutes). Remove kernels from the cobs to get about 2 cups of corn.

In a bowl, whisk together the heavy cream, softened butter, lime juice, ancho chile seasoning, and cayenne pepper.

Gently fold in the crumbled Cotija cheese.

Drizzle the creamy mixture over the corn kernels and toss gently to combine. Serve immediately, either hot or cold.

For an extra smoky flavor, try grilling the corn with the husks on for the first 10 minutes, then remove the husks and grill directly until charred.
If you don't have ancho chile seasoning, you can substitute with a mix of chili powder, smoked paprika, and a pinch of cumin.
Feel free to adjust the amount of cayenne pepper to your preferred spice level.
For a creamier texture, use Mexican crema instead of heavy cream.
